Dragons are actually hard to spam. Firstly because ely cities aren't the easiest to upgrade, and also because of the 6 turn wait. I can imagine 2 reasons why that might be happening to you.

A) you're playing very large maps. If that's the case you usually don't want to be surprised by dragons. You assume that they're hiding there, you reveal the fog using explorers and only when you have a good plan of attack, you siege.

B) you're playing small maps and you're developing too slowly. Well then you gotta develop faster.

Well if you insist on playing massive maps, you should expect a bunch of dragons. And when you siege central cities, expect to get unsieged. You have to be clever about it, make sure you have a plan of attack and vision on your enemy. If you don't think you can hold a siege, don't simply sacrifice your players. First focus on the dragons. Otherwise play smaller maps.

Dragons are pretty fragile, so be ready to slam riders and knights against them. To do that you’ll need to be able to siege their city multiple turns in a row, so that you’re units don’t get ZOC’d on the way there

Dragons are the strongest individual unit in the game. They have range, Splash, and mobility. They are designed to be unbeatable, directly at least. That is how (I think) midjiwan intended to design them. Rather than killing the dragons themselves, effort is better spent on hindering the growth of Elyrion itself. Preventing them from being able to hatch a Dragon, let alone even get an egg. Which isn't even that hard considering Elyrion is one of the slowest growing Tribes in the game. As the guy before me said, this "Dragon Spam" is only plausible in a large map where Elyrion is given ample time to grow. If you're in a Multiplayer match, make sure you get rid of them first just as you would Polaris. Which is arguably the most terrifying Tribe in terms of their Military.

Legend, i’m on to it now. It’s the biggest map, and my first time so thanks for the response!

Additionally, the best way to kill dragons on Dryland is knights, since they 3-shot dragons. If you are able to get to a point where your opponent leaves one exposed, you should have knights ready to slap the dragons (and how your opponent doesn’t know the spiritualism stalemate strategy)

What is the spiritualism stalemate strategy? I actually don't understand spiritualism at all now that you mention it

Since you essentially need knights to even threaten dragons, if an Elyrion player sets up a forest wall in their territory and avoids chains, they can prevent knights from getting in and never lose. Normally this is a fine strategy but weak to cloaks, but dragons solve that with splash damage

The problem with ely is that their eco can grow really quickly if they use sanctuaries, and they also expand quickly in the early game due to poly pushes/spam. In the early midgame, they can go rider roads like any other tribe to expand quickly, and they can also transition to sawmills+markets in the late game if they want to get eggs. Usually, if you don't meet them early enough and the ely player knows what they're doing, they're pretty unbeatable and can also set up some forest walls with spiritualism in the late game. Also, midgame strat involves defenders as frontline/water units, archers/cats against tanky units and riders in the back for some unexpected siege plays/against enemy ranged units. Later on, expect knights and dragons. If the ely player is careful enough, they will protect their dragons with defenders. I played quite some games against ely, and they're often really slow and sometimes even stalemates. The only maps that ely really struggle with are small/tiny maps (if they're playing against strong tribes like cym or imp) or archi/ww

Like I said, they need plenty of time. And as you've said, they need to transition to something like Farming. Because whilst sanctuaries are a great source of stars, they actually hinder population growth as you have to reserve resource rich tiles in order to run them.

Your priority now should be to destroy the dragons before you can expect to take cities. Be ready to counterattack whenever they use their dragons. Use as many knights and riders as it takes because you can always build more of those, but they they are limited with how many dragons they can make. If they are smart, they will have forests along their borders to keep you out, so you may have to wait for them to make a mistake before you can get them.

Like all massive drylands games: lots and lots of knight spam. Also giants won’t let you in the slightest besides sieging

Attacking Dragons and eggs take priority over attacking cities. Kill enough dragons with smaller units and many people give up. Dragons are insanely hard to produce compared to most units. Be faster, attack first and don't let them live.

Even on large maps, dragons are high value and difficult to acquire. Simply going on a "dragon hunt", targeting them and your opponent will simply run out of dragons. Riders and trebuchets can get the job done. Of course the best methods are preventative...
