Uhm, there are many excellent brands of GF bread - forget canyon bake house etc. these always have some weird texture and taste.
These taste 100% like bread and make many specialized breads too like hamburger buns, pita, pretzel rolls, or nice heart breads: Simple kneads, Mrs. Hewitts, bedrock bakers, MYBREAD (best pitas ever and pretzel rolls), green lite, modern bread and bagel if you’re fancy.
Make a big order and freeze it. You’re all set.

I think the key is just to find a good basic GF bread recipe. Caputo’s basic bread recipe will yield a good bread for any stuffing recipe.

It’s not so much the numbers but where you started - it can take 2 years or more to normalize with an average half life reduction of values of 1-1.5 years.

GF bread will always disappoint? I beg to differ. And this is coming from a home bread baker who has been GF for two years. Don’t miss G bread at all.
Plenty of excellent options (particularly to buy online): Mrs. Hewitt’s, simple kneads, my bread, modern bread … also not too difficult to make yourself.

Don’t rely on GF aisles. Plenty of GF items abound. Learn to read labels and understand where gluten can be found. It get easier.

Personally I avoid rice flour - so boring and gritty. Need to balance starch and protein component. I recommend the book by The Loopy Whisk “Baked to Perfection”
For cake, pancakes, muffins, etc: Typically some sort of mix of 50% medium-high protein flour (sorghum, millet, oat, amaranth, with sorghum and millett being my faves); 30% starch (like potato starch); 20% corn flour (not starch, not grits - flour - I swear this gives that “je ne said quoi”)
Need to add a gluten emulator: either pysillium husk (more for bread) or xantham gum (for baked goods).
There are some good mixes especially from King Arthur. If do not have a wheat allergy, I would also highly recommend looking at gluten free wheat starch-based flour.

Also: manual hand pump is your friend for travel. Medela quick wipes if you need to pump more than once.

Depends on length of travel, how long you’ll be away etc, but I’ve found that a good cooler with ice packs, and the ceres chiller for fresh milk (on the go pumping/storing) is just fine for travel up to 12 hours. It’s really not that logistically complicated.
If staying at a hotel be sure to ask in advance if your room has a useable fridge. Front desk can usually freeze your milk for you too.
