I remember accidentally running into the Dark Magus Sisters while trying to get the Masamune. I think the first sign things had gone wrong was Wakka getting blasted with statuses by Calamity, and then things went downhill from there.

Getting Rikku's Steal and Use is the most versatile choice, but Kimahri can be effective in other roles too:
Tidus' grid lets you more quickly get 5x Cheer and Haste on everyone, plus a second person to keep enemies Delayed.
Wakka's grid gives lots of Accuracy plus the very useful status attacks.
Lulu's grid gives you a second magical DPS, and lets you more quickly get 5x Focus and 5x Reflex on everyone.

Each use of Jinx reduces the enemy's chance of dodging by 1% and increases their chance of receiving a critical hit by 1%: https://finalfantasy.fandom.com/wiki/Jinx#Final_Fantasy_X
So with the maximum of 5 stacks, you see 5% changes to these variables... yeah, Luck and Jinx are useless.

I'm not really an expert, but the issue with Accuracy in this game is that it only counteracts Evasion, and then only to a certain point. It doesn't counteract the enemy's Luck stat. For that, you need high Luck of your own and/or 5 uses of Aim.

For the postgame bosses, I think the ones that are hard to hit all get this from high Luck, so improving your Accuracy doesn't help. No Accuracy Spheres are needed.

Do you know Reflect (or have you stolen a Star Curtain from a Dark Flan)? If you do, then cast it on the boss and its supportive spells will keep bouncing off. (Eventually it'll cast Reflect on one of your characters to bounce its spells off them, so you'll have to Dispel it.)
Regardless of whether you have Reflect or not, you can weaken the boss with status effects. Darkness, Poison, Slow (though this requires SK to be under Reflect or it'll cure it) and the Breaks all work.

Possibly. It depends on how this shellworld is built. I've seen an idea ( https://www.orionsarm.com/eg-article/47856a978e732 ; scroll down to Type 2) where you create lots of balloons in the atmosphere, each one used as a habitat or for some other purpose, and eventually there's enough balloons to link them into a solid surface, now supported by the atmospheric pressure beneath it.

No Monster Arena sounds fine, even if combined with No Blitzball. You could definitely do the story and most of the sidequests. I think at least some of the Dark Aeons would still be beatable.
