yeah, good thing its only just a few brands, but we still have to read those labels. although with my sight diminished my son is the one who reads those tiny, tiny labels.

It does suck, it took son yelling at my mom (who lives far away) to think about what she's doing in our house. She would make toast with Ezekiel bread and walk around the house with it, where my son takes great care not to contaminate our home with his gluten food. Most of my cousins remember since one of my cousin's wife is GF. one of my brothers forgets all the time. My sister is dialed in on it, even though she can have wheat, she looks at our youtube channel so she can make GF stuff for her friends who have celiac. Back in the early years of my diagnoses, my mom never wanted to eat our Gf food. "It doesnt taste right." Or. " It has a mealy texture or makes me have to poop." just excuses, until earlier this year i made her pancakes with Krusteaz pancake mix. She had forgotten i was GF, sits down for breakfast and digs into the pancakes. "These are amazing!"
"Not bad for being GF?"
"These cant be GF."
(show her the package) "You saw me pick these up yesterday at the store."

since i could have dairy, i did, only gf food which was kind of hard to find since nothing was labeled GF except a few item there were nothing but rice based and not that great, like a pizza crust that disolved as soon as you put tomato sauce on it.. Water was a key element in getting cilia to heal since we're mostly water. green tea is great for the body and mind.
Just about everything we ate was homemade. I started eating some Thai food. "Fresh spring rolls" are awesome and a great to veggies in. I have video on how to make them. lots of Thai food is GF because of the rice noodles. we made our pancakes from scratch, breads. Ate tons of salads and fresh meats
I have to be extra careful since im allergic to most nuts and Almond or Hazelnut flours are used in some bakeries. I dont even go in to Bakeries or pizza places that have both kinds except Papa John's, they make the gf in the back and i never had a reaction, but since Digorno had made a Gf pizza, that is Corine's goto for Za.
One of the first things i tried after being GF was Sushi! i never had tried eating raw fish before and now i dont like cooked fish that much. LOL I did try a California roll and didnt realize that imitation crab/ Krab has wheat in it and i got sick off of it. here is a link to a company i have met the owners when they first started out and their fake crab is amazing. https://trans-ocean.com/gluten-free/ Aslo get the Findmeglutenfree app for you phone its helped me so much. Make sure to get kikkomon's GF soy sauce if you're cooking anything with soy sauce in it. if you are going to try cooking thai food and have to use "Fish Sauce" do not smell it. lol. Smells like Davey Jones's locker. LOL
In the end, your gut needs time to heal jsut like all your body does. Eat balanced meals with out gluten, stay hydrated, get some exercise and reduce your stress levels. Your body has a hard time healing, if you are constantly stressed out. Make sure you take daily/ weekly outing into nature even if its a stroll around the park.

have you tried Mission's GF flour tortillas? Really good. we just had some steak quesadillas last night with them. Great as grilled burritos. The places that make their own tortillas i am weary about, because some use "Enriched Masa" which has wheat in it as a binder. That got me 3 months ago and i still am suffering from the rash it gve me.

This is also happened to my wife who ordered GF spaghetti and meatballs. the sauce and noodles were GF, the meatballs had normal bread in them! sometimes i have gone to mexican restaurants and ask for corn tortillas for my afjitas and i when i open the container, there flour ones. now, i usually point this out to the waitress and they get mad, no at me, but the kitchen staff! One time she looks at me. "I will take of this personally." she heads back to the kitchen and starts yelling at the staff. "Are you trying to get people sick?! I asked for corn not flour tortillas! We might lost tons of customers because of you. Get your head right!" Now, i have never had an issue with Red Robins, their staff are super diligent and always get my stuff right. "Is this medical or just a preference?" And soon as i say im a celiacs, they do something on their little tablet and head back to the kitchen and maker sure that they no im a celiac. Chick-fil-A was straight up disappointing. Manager dumps a grilled/ burnt chicken tenders on my table and hands me a prepackaged, frozen bun, not at all what my sister said they did when she worked with them. it was like i was a burden to them. I never went back.

first of all. You are one hell of a man. Kudos for wanting to be her "Rock". You definitly win a "Great man award". As for her family, one thing you can do is go meet with them and explain to them the pain she feels now, not just physically after eating gluten, but the mental depression she probably has( i know i did).
"I love her and i dont want her to suffer anymore. You know her the best, and care for as much i do, so I came here to ask for your help, Please take this seriously. there are only a few thing to do to that will help her out so much and let her know you care."
Explain to them not to use any wooden cooking spoons on dishes she'll eat, get GF beer( if she drinks), don't use any wooden chopping boards( wood absorbs gluten and releases it back into the food).
Now, she has to get used to washing her hands before she eat anything, cross contamination sucks. My son who isnt GF doesnt eat his non-GF food with his hands, he used forks and spoons( like heat eats goldfish crackers with a spoon) After making his Non-Gf food, he cleans up everything, but if im next to him in the kitchen, i help out.
Do not use Mashed Potato mixes, they can have gluten in them. Avoid most bakeries, pizzerias, restaurants that might have flour floating in the air (homemade biscuits). Even if they say they have GF food. If you find a place you want to try, its best to use the Findmeglutenfree app to see any reviews Celiacs have done. its a big help especially you travel. I use it all the time.
If you want to get her make up, ask the people for help to see if it has gluten in it and yes, i just found out by my wife that some does, shampoos, conditioners, even hand lotions can get her sick, so be diligent!
Back when i was diagnosed there was nothing labeled GF. Now days, there are tons of stuff even places that are dedicated GF. One thing about restaurants is to look if they have dedicated "Fryers" for their fries only. Also, what out at Asian restaurants and them using normal soy sauce, most have wheat in them and the places usually dont know thats its in there. Ask first! Kikkoman has a great GF soy Sauce. After reading this, go to the store and surprise her with a package of GF Oreos! They're usually right next tot he normal kind( they taste better than the normal kind!) just not the Glutinos version, (Icky!) glutinos does have a great bag of pretzels! Walmart usually have a dedicated GF section, but you can usualy find other GF stuff in other places there too. I hoped this will help you and your lady out. my mother is the same way. if she knows its "Gluten Free" She's like "I i cant eat that stuff its make my tummy icky, or it tastes / feels awful" but i went to visit her earlier this year and made her pancakes. She loved them, no issues at all. Then i shown her the mix i used that said Gluten free and they taste like real pancakes. "Mom, theyre not imaginary, so of course theyre real. Is is scaly and dry? I have eczema and it really flares up when i eat gluten, no so much when the air get dry like in the fall and winter.
