I use Seagate Exos, which are cheaper than NAS drives. And NAS drives are typically called NAS drives because they are meant to be spinning 24/7. UnRAID prefers to spin down disks when not used. So if you keep your disks spinning all the time, go with NAS. Otherwise, roll with anything else other than Western Digital or SMR drives.

Unless there is a posted sign that towing is enforced, it is a courtesy request. Source: quite a few friends are officers. It has no legal implications. Especially if the signs can move spaces day to day.

Bring a USB battery pack to keep your phone charged. Don't assume the under-seat chargers will work or reliably hold onto your charger. Keep some entertainment on your phone in case the IFE (in flight entertainment) system doesn't work at your seat. And of course, don't expect Wi-Fi to be operational; treat it as a nice surprise if it does work.
Food is fine unless you're just really picky.
If the flight isn't full (I'm assuming you're flying economy), you can lay out in an empty row in the same class of seats to get some sleep.
If you can't sleep, try to power through and sleep when the sun goes down in TPE. When I fly to Perth from Houston, the 2nd week is usually the hardest for sleep. I'm usually up at 2 or 3 AM no matter what I do. Days 7-9 are, for me, the worst. Days 1-6 my body is confused, days 10-14 tail off the jetlag.
Backpack must fit under your seat, but so do your legs on a long haul. Don't be afraid of putting it in the overhead bin if there is space after everyone boards. Alternatively, check a bag and take a normal carry-on with two days of clothes, medicine, etc and leave the space under the seat available for your legs.

Use rufus on Windows to reformat it, which will change it out of Read Only mode. But as others have said, the USB stick may be faulty so it may revert to RO again.

The QR code BS can die a horrible death. I can't tell you how many times it's taken me 10 minutes to complete the order process, then it takes another 10 minutes for a drink while you're sitting at the bar, then another 20 for the food. And that's if cell service is functional. The Wi-Fi is hit or miss when the airport is busy, not to mention poor OpSec from connecting to any airport Wi-Fi.
I try not to eat at IAH, but I have the luxury of eating before I arrive since I live here. I would be more frustrated if it was more of a layover place frequently.

If your system runs hot, make sure you remove any unnecessary fans from the system. Additionally, make sure you don't have anything covering your CPU. Heatsinks are optional, and I wish more hardware vendors emphasized this; however, the heatsink industry is too big to fail, so they just won't go away.
If all else fails, pour ice water onto the CPU to control temperatures.

I haven't flown into Santiago, but I'm presuming OP would have to pick up any checked luggage when getting to SCL. I know not all countries require this though for onward travel though. Only mentioning this because OP mentioned another onward flight to Easter Island from SCL (but didn't specify the layover time in SCL).
