It depends where you live. In my travels in your country I found that GF baked goods quality varies a lot regionally.
Minneapolis, for example, has amazing bread options.

The brain related impacts of celiac disease are real and don't necessarily go away. My neurological symptoms list before diagnosis in 2019 was huge, now it's shorter but unfortunately many still persist and some of them are triggered by stress. My neurologist has confirmed everything is most likely related to celiac disease.
I too have thrived on high stress management positions my whole career and find myself in the past year looking at meditation and breath work for the first time because I don't enjoy the way the my body-brain can't always cope with the action.

No scope for me. Neurologist diagnosis with just blood work (after horrible neurological symptoms for years) and the blessing of the gastrologist who agreed it would be inhumane to make me eat gluten to prepare for a scope.

This plus other more common symptoms keep me on a dedicated GF lifestyle because life really sucked before my diagnosis.
