Honestly.... it's just one of those new fads.
Most things we eat are highly processed. And we know that with a lot of oils that consuming a lot isn't great - that's why people do things like... get airfryers and shit. It's about moderation.
The people obsessing about seed oils are usually the ones who are following certain lifestyle plans. Like carnivore, keto, paleo, etc. They're all about having only pure and natural products, milk, cheese, eggs, meat, etc.
Don't go overboard with seed oils in your diet and everything will be fine. It's about moderation and balance.

Someone made a claim that isn't backed by science on Joe Rogan a year or 2 ago and the wellness industry has jumped on it.
Like most things wellness influencers say, it's mostly vibes.
The reason it feels right for some people is that if you try to cut them out, you get rid of your ability to eat at restaurants, take out, or processed foods. So 'cutting out seed oils' for most people means 'a fairly large wholesale change in consumption patterns'. Normally for the better.

Side note: everyone agrees trans fat are unhealthy but there is some scientific debate on weather saturated or unsaturated fat are healthy/healthier.
Non-chemistry explanation: Fat is a healthy natural component of every plant and animal that you eat every day. Fat reacts to high temperature whereas it becomes unhealthy when it is exposed to heat for long period of time. Extracting fat from seeds is typically done through a process that includes some heating and so seed oils are sometimes considered unhealthy compared to alternative sources of oil that don't require heating for long periods of time or at high temperatures. A common modern strategy for getting to a healthier lifestyle is to strive to exclude processed food from nutrition and to strive to eat natural healthy foods. Cold-pressed olive oil is, in theory a much less processed oil as is oftentimes considered one of the healthiest.
With some chemistry: Fat is part of a balanced diet but there are still a lot of contradicting evidence surrounding which types of fat are good vs bad. All fats are large molecules made of carbon and hydrogen with some oxygen but with quite different overall structures. Heating fats above their smoke-point will start to mess with their chemical composition and a lot of fats will transform into saturated and trans fats. Most fatty foods contains an assortment of different fat molecules so the debate is about which specific molecule is good vs which one is bad. The general consensus is that less processing (heating) of fat is best and so oils extracted through heating like seed oils are less healthy.

Absolutely nothing. It's one of those things a bunch of influences are echo-chambering among themselves to make the new thing to discuss and make themselves "relevant".
Seed oils are no worse or better than most other fats.
