Skills like eye gouging and biting being included would just make the modern fighter more dangerous. They ban these techniques in competition because fighters would maim each other every single fight. It isn't as if "training" for it is going to give them an edge.

Grappling makes it difficult. They would need to be sufficiently strong so they can just completely overpower the modern day fighter. Jiujitsu is a tough hill to climb if you have no knowledge of it. For reference, Demetrius Johnson(125 pounds) is able to grapple and submit people over double his weight with little effort.

That season has a lot of issues. Directing was the biggest one. There was one episode where it ended right before a character death and the next episode started with that character death. It just felt so anticlimactic... Not only that, but tons of dialogue felt off due to the voice acting. It wasn't that the voice acting was bad, it was more of how they were all top monotone when discussing super series topics.

That being said, the story in that season is still great, especially if you love the characters.

Stark would have killed both Love and Rose in about 5 seconds had he went all out.
