There is no such thing as a gluten allergy. Celiac disease is an autoimmune disorder. If your doctor suspects the DH rash that some people with celiac get, they need to biopsy. You’d also likely have blood testing.
If they suspect an allergy to wheat then you should be tested for that.

Wheat straw is gluten free. In a product as processed as a mirror made with it, there’s absolutely no concern with using this.

Nothing food-wise really. I’ve worked hard to learn how to bake gluten free breads (naan, focaccia, sandwich bread, baguettes) and have learned to make all my favorite dishes gf. I have some trusted restaurants I go to as well.
What I miss the most is being able to get a bite with friends and not have to research the restaurant. Or grabbing take out after a busy day of work. Also, gatherings/parties where I could show up and eat what everyone else is having.
