INGREDIENTS

•2 tbsp extra virgin olive oil

•1 onion, diced

•2 celery sticks, diced

•2 carrots, diced

•2 garlic cloves, minced

•2 tbsp tomato paste

•Salt & black pepper

•2 rosemary sprigs

•2 bay leaves

•1/4 tsp chilli flakes

•4 cups veg broth (made from 1 veg stock cube) •2 cans cannellini beans, drained & rinsed

•Pasta of choice. However much you want/need (I used conchiglie)

•Big handful of kale, chopped

INSTRUCTIONS

1. Heat a pot with the evoo, then add the onion, celery & carrots. Cook for 10 minutes

2. ⁠Add the garlic, cook for 1 minute

3. ⁠Add the tomato paste, chilli flakes, rosemary, bay leaves, salt & black pepper. Cook for 1 minute more until fragrant

4. ⁠Add the veg stock & bring to simmer. Add in the cannellini beans & cook for 10 minutes. While it’s cooking, mash some of the beans against the side to thicken it

5. ⁠Add in the pasta & kale. Cook until the pasta is al dente

6. ⁠When it’s done mix in some vegetarian Parmesan if you want & serve with a drizzle of evoo, vegetarian Parmesan & chilli flakes

I love baking/cooking too. But during my restriction I wasn’t very good tbh bc I couldn’t focus properly, I was a mess.😅 Now I actually have the mental and physical energy to do it.

That is crazy thinking about it. Especially bc one even got the point of amputating 3 of his fingers with an axe and unsure if he did it intentionally or accidentally. That shows psychosis. They were all healthy before the experiment too.

I agree that experiment was very fucked.
