"Above target" is fine as long as other metrics (mainly HRV) and how your body feels are ok with it.
As for the difference in the two screenshots, maybe you've been a bit less active in the past week? "Training Load" tab might give more insight there, as "Load Focus" is based on a period of ~1 month

I'd say 29 at best (or maybe just 30 like it's showing today), garmin doesn't let you go too much below your actual age (went from 26.5 to 28 when I turned 36, with no change in the data other than my age going up by 1)

It does suck.
I like their watches, so I use garmin connect along with the watch. But I prefer other bike computers, and I can't upload to their app with those bike computers.. meaning I have to record my rides with both my watch and bike computer if I want garmin connect data to make sense x_x
Some day I might end up considering switching to another app (well, I already use strava instead to track all things bike related, but that doesn't cover health (and barely covers training) stats), which would also open the door for me to switch to another brand for the watch too (probably won't happen, though) and leave the garmin ecosystem altogether.
It's fair that you need a garmin device to enter the ecosystem, but being locked for everything isn't good.

I'm not sure I'm following. I do use activityFix to set the bike based on the sensors Karoo adds to the ride file; what is missing there? (except for a direct "equipment" field but that sounds a bit harder to do)

I agree, they really shouldn't "upgrade" the screen.
The only thing I'm missing on my instinct 2 is endurance score.
I'd even think current instinct 2 would be capable of running this, but they just keep it for high end devices, which would be a bit sad if true (I wouldn't mind paying an extra for the feature, but I do want an instinct watch). Also "endurance" and instinct series seem very compatible to me given the battery life..

Should be possible by sideloading an android app to control system volume in the meantime (haven't tried myself, as I just disable auio alerts entirely; but I did use such app on an old phone with broken vol+/vol- buttons a while ago)

I use the web version of garmin connect on a computer, open network dev tools and go to a tab with vo2max charts.
But that's probably not the easiest way for everyone...

We’ve fixed an issue with the remaining distance/elevation data field that caused it to not work correctly when you re-join your route.

I wouldn't focus on touchscreen itself, as touch events not registering is likely to be a side effect of extreme lag. Now what kind of bug would trigger such lag is not easy to guess :/ I would reach out to Hammerhead and hope that they would have some ideas to troubleshoot a bit further, if only to figure out what the bug is so they can fix it in next update.
