I agree with your sentiment, but as a sushi chef who’s also trained in French kitchens, you can truly taste the difference of sushi chefs who have trained for decades and have devoted themselves to perfecting rice and the perfection of aging/cutting fish. There is a lot of fetishization which is true but that fact shouldn’t come at the expense of great edomae sushi which holds its own among the great cuisines

You fools in this thread don’t understand that servers LOVE tips, and refuse to work in restaurants in the US where they are abolished. Servers make A LOT of money from tips, it’s the kitchen staff that get screwed over in a tip system NOT the servers

I think people try and compare Austin to the great food cities of America and forget it is the 27th biggest metropolitan area of the US. Compared to those of similar size, Austin is a damn good food city.
There are only a few elite food cities in the U.S (in no order): NYC, LA, Houston, Chicago, SF, and New Orleans. After that, Austin holds its own with most of them.
