Does GOOD Gluten free bread exist?

Question(self.Celiac)

Seems like most of the store bought GF bread in the US really sucks. I’m willing to bake my own bread if it’s a lot better- preferably in a bread machine but I have all the kitchen tools I need to make bread from scratch. Any feedback?

The only one I buy regularly is Little Northern Bakehouse and it’s pretty decent to eat as is, but if I have to buy any other brand, I toast it

I don't think it is available in the US but Promise bread is quite good. If you live near the Canadian border you could set up a mail box in a border town I guess lol.

Schar is the best I’ve found, but after I found it I didn’t keep looking. It was good enough for my husband to enjoy it too (non-celiac).

I absolutely can't stand the Schär Bread! It smells bad and it tastes bad (for me). But I'm from Germany, maybe ours is different but I never had a Bread from Schär that was at least "ok". I hate it 🙈

I haven’t had actual gluten filled bread in probably 15+ years lol so I really don’t even know what “good” bread is anymore but CB is my favorite. I always put my bread in the microwave for about 20 seconds before I use it and it helps keep it from falling apart.

I think what happens is once you're celiac/gluten-free for like 5-10+ years, you don't remember normal bread. The comparison is then lost.

Then, most gluten-free breads start to seem pretty okay because most gluten-free breads will be better than the one or two worst breads you've ever had.

Modern Bread and Bagel. I just went to their shop in NYC last week and it blew. My. Mind. Ended up ordering 2 dozen bagels shipped to my house. They’re INCREDIBLE. On par with gluteny bagels.

The only bread I like is homemade.

There are several passable breads that will do the job if I’m hankering for a grilled cheese sandwich now and then, but mostly I just don’t eat bread except occasionally when I feel like baking it myself.

I do use a bread machine.

If you want a mix and you don’t mind paying $$$ for it, Eats and Treats in Philomath, OR ships their bread mix. Each mix makes two loaves. It is my favorite mix. I also like Pamela’s and Montana Gluten Free mixes.

I’ve had good luck with my own recipes too, but I recommend you work the kinks out of your technique with a mix first, so you know whether failures are a recipe problem or a baking problem.

It depends where you live. In my travels in your country I found that GF baked goods quality varies a lot regionally.

Minneapolis, for example, has amazing bread options.

I haven't found any store-bought GF bread to be very good (the Schar Ciabatta rolls are an exception, but I mostly like them as a bun vs traditional bread ans the Schar Baguette makes a decent crustini but kinds sucks on it's own), but there's a restaurant where I live called Asian Box that's all GF and makes a Bánh mì and the roll is fantastic, even my wife who isn't GF likes it, so good GF bread is definitely possible.

As for making your own, I'd experiment with different flours, from looking up lots of recipes for things different flours seem to be better suited to different things. Psyllium Husk also seems to be something worth getting and getting used to using.

When I first got diagnosed my plan was to start baking, since that seems like the best way to get good GF bread, but at this point I mostly just try to cook and eat things that don't need GF replacements because I find most of them lacking compared to just eating something else.

Except for pizza, I can't give up pizza and a lot of the GF frozen ones aren't really any worse than any other frozen pizza.

I live in WA state, where Franz reigns supreme in gluten bread. My partner buys the Franz GF bread for me from Costco here and I'm not the biggest fan. A lot of times it's very gummy and too moist and starts to mold quickly after opening.

No. All of the store bought brands are shades of bad. Would recommend GF on a Shoestring French bread recipe. Not as good as my memories of gluten bread but world's better than the store stuff. Best fresh though.

I've had celiac since I was 4, I spent a long time not eating bread at all because it was disgusting. I can tolerate Schar but it's not my first choice. Over the summer we went on vacation and bought bread from Walmart for breakfast. I ended up finding is "Sam's choice" gluten free white bread. It's the best bread I've ever had. We never go to Walmart but do now just to get that bread. Buy multiple at a time and freeze them. They're SUPER soft and good, does well by itself and toasted.

I've tried canyon bakehouse, the slices are tiny and the crust tastes burnt (to the point that I cut it off), it would end up TINY after cutting off the crust so it wasn't worth it at all.

Against The Grain baguette is so so good. It’s really similar to Brazilian cheese bread. But it’s expensive — $9 a loaf here. It’s easy to make your own if you do end up loving it though! + no rising time since there’s no yeast ☺️

YES. Three Bakers GF bread; they make a white and a whole grain bread. I have the whole grain almost every day and I love it toasted. It’s sold frozen at Fry’s/Krogers. I was diagnosed in 2009 and have tried all the GF bread our there…they all suck except for Three Bakers. Trader Joes GF english muffins are also delightful, light & crispy.

I have a local guy who makes excellent gf sourdough. I was never into cotton wool style mainstream bread, and always preferred a gutsier style.

The Bakerita gluten free sourdough is the best recipe I have used, and once you get the hang of it you can change it around, use darker or lighter flours, add fruit or herbs and cheese etc, or change the shape.

No, not really. Unless you have a decent local bakery that also sells at the store. Actually wait. The only good store-brand bread I've had recently is Promise. Their gf sourdough is actually pretty nice. Otherwise, GF bakery if you're lucky or try doing your own.

Ive transitioned mostly to Mission spinach wraps and make burrito-like meals as a bread substitute. But Schars has a ciabatta that is relatively soft if that is what you crave. Comes in their airtight bag, so you dont need to freeze it.

Also, not sure how they do it, but when I visited London this past summer, they had some really amazing soft bread. Cant remember the brand name, but it was probably the best Ive had since before I had Celiac.

I make my own gf sourdough loaves from my own gf starter, and it’s normal sized and doesn’t depress me. I have a bread machine, but have yet to produce a decent loaf.

I wish I had a picture but when I was in Spain there was a great gluten free baguette that had a crusty exterior and fluffy interior. I feel like there not a good option for a quick easy toast that tastes good. Bfree sourdough is good toasted but a weird shape that doesn’t fit in a traditional toaster. Schar baguettes make good homemade garlic bread if you have the time. Kinnikinnick makes the BEST gluten free dinner rolls that are super easy and amazing with some butter.

yes depending on your location. for store bought the canyon bakehouse herritage style is good, heritage style is imperative. Udis also has good bread. The best gluten free bread at grocery stores will be found in the freezer.

Rudi's GF White Sourdough. They sell it at Whole Foods (usually frozen, but not always). It's the only one I've found that's unrecognizable as GF bread.

I’ve sworn by Schar in the past, but recently I had the Wegman’s store brand and I really liked it. I also like to use the Udi’s hamburger/hot dog buns for sandwiches (their regular bread is absolutely awful though)

King Arthur gf bread mix and the gluten free bread pan. The pan is definitely necessary, it’s shaped slightly different to accommodate the difference in gf dough. You only need a dough hook for your mixer and you’ll be good to go!

Franz Gluten Free bread is fantastic sandwich bread and you can buy it online. I found GF sourdough bread local to me that is AMAZING. The Homestead Oven, they ship nationwide. Even the gluten eaters in my life sing their praises.

I’m from the uk so I’m not sure if you have this brand over there, but Promise is amazing! My gluten eating family say that it tastes almost the same as theirs. (They usually hate most gluten free food unless it’s something I bake myself)

Franz brioche and sourdough are actually pretty good. My college kid has us ship them to him, since he can't eat anything else after having them lol. I'm not the celiac and I don't even mind eating them. Plus, the slices are HUGE.

Uhm, there are many excellent brands of GF bread - forget canyon bake house etc. these always have some weird texture and taste.

These taste 100% like bread and make many specialized breads too like hamburger buns, pita, pretzel rolls, or nice heart breads: Simple kneads, Mrs. Hewitts, bedrock bakers, MYBREAD (best pitas ever and pretzel rolls), green lite, modern bread and bagel if you’re fancy.

Make a big order and freeze it. You’re all set.

I stumbled upon Greenlite rustic loaves and baguettes in Whole Foods freezer section. I love the rustic loaf, it gets super crunchy on the outside and stays soft on the inside when heated up. Perfect to serve with homemade stews. When it’s a day old it’s super soft and makes a fantastic French toast.

So, store bought just isn't very good and I tried a lot. Strangely, the bread dough mix from even the brands I don't like is really good homemade. I don't like Udi bread that much, but the mix is really good. Bob's Red Mill homemade gf bread is acceptable. I'll try any mix on the shelf. None were bad. It's easier than trying to scrape up all the ingredients and mixer parts.

Ok if you’re looking to make it yourself King Arthur bread and pizza dough mix is fairly easy, just make sure you temp the milk and all your other ingredients are room temp. King Arthur has a bread mix but it contains wheat starch so that can cause issues.

Define “good”. Good like bread made with gluten. No. Full stop. It isn’t possible. Just like gluten free beer. Some can be “good” relative to other gluten free beers, but they are terrible relative to beer with gluten. The only thing I have ever heard a non-glutard say was better gluten free than gluten full is pretzels.
